Need some dinner advice

Ok, my mom can cook, but only very basically. Frankly if it can't be boiled or deep fried, she can't cook it... and even that is up for debate sometimes. So, we are having company this weekend and she requested I make dinner.

There will be five people coming. Out of the five of us, four of us are on a low carb diet. One is a picky eater. One is diabetic. One, thankfully, will try just about anything as long as he doesn't have to cook it. One will eat no meat except poultry. So I am trying to come up with a menu which will satisfy us all, without being boring and bland.

Let me know what you think.
For the main course I am making chicken breasts, with a layer of jalapenos (left off for the picky one) then a layer of swiss cheese, covered with turkey bacon.
My salad is going to be a tropical one. Starfruit, kiwi, bananas, and mangos with mango nectar and a vanilla yogurt for a dressing.
Veggies are going to be steamed asparagus. Also a califlower, steamed and mashed, mixed with cream cheese, parmesean cheese, and a dollop of heavy cream.
Appitizers/garnishes are going to be things like deviled eggs, radishes, tomato rosettes, and kim chi.

So, what do you think? Sound ok?

Re: Need some dinner advice

lol Dip.... as long as I don't have to add any more restrictions to the menu, come on and join!

I just get tired of the same old things all the time. I think if I have to eat turkey meat once more anytime soon, I am going to just start growing feathers.

Thanks ya'll!

Re: Need some dinner advice

Hehe, I've done the turkey meat too and it is not appealing at all.

When I need to go the healthy route I switch from Taco Bell/Little Caeser's/Bar Grills to a couple SouthBeach Diet cookbooks and the trade-off in satisfaction/taste isn't too much to bear. But in all honesty, it seems like diet food is the more expensive route, which drives me back to the value-menus

Re: Need some dinner advice

I agree with DiP on 2 points.

1. You better have another place setting.

2. Healthy food costs so much more than junkfood.

I have to disagree with DiP on the Turkey meat tho. Turkey burgers rock my world. Id eat them daily, but the wife doesnt like them.

My mom puts mayonnaise on Asparagus... *vomits*

Im seriously drooling over that chicken right now. Savor a bite for me!

Re: Need some dinner advice

Mayonnaise on asparagus... I'll have to try that.

I haven't had a turkey burger, will have to try that too. I've been into "Garden Burgers". Got some with portabello (sp?) mushrooms in them I haven't tried yet.

Your diabetic will need a different salad. Maybe I should say there are better salads for a diabetic . Other then that it sounds like a great meal
