NPC Quest ect.

Ever since hearing about the new expansion, I've been paying close attention to the things that bother me about the game now and what I would like to see change. I would consider myself a loner at times, and I can say that one thing I would like to see a tremendous change in is the depth of NPC quests now. Im sick of being an errand boy! If you think about it, the quests really dont extend to much more than running around the world on a collection spree. I would really like to see some more depth, rather than mindlessly harvesting a thousand resources or trading one pointless item for the next in a long chain of repetition. Another thing that bothers me is pet pathfinding. I get so frusturated when my WW redlines an enemy, and then starts freaking out and walking around like its performing a mating-dance, and it takes another 10 minutes to kill the enemy im fighting.

Unfortunately, I can offer you no more than an "Oh well" for your frustration to quests. In my experience I have noticed that there are basically three kinds of quests:

-Kill x number of some monster.
-Gather x number of some item.
-Go here.

Of course, sure, you could always add a more elaborate "story" to these quests and quest chains, but what then? You're still left with the same, boring grind-fests that result in any quest system. This is because quests are scripted, highly-defined, and all around linear.

And it's possible I may be misinterpreting your call for "more depth", but to be honest, adding more depth just means making the quests more linear, which is a bad thing for UO.

As for your problems with pets, there's about a million things wrong with taming these days I'd say, but it sounds like the target that you're redlining is trying to run away and moves to a spot where your pet cannot get to normally. If your target starts to run away, start clicking on its health bar a bunch and it should start walking back.
