Yes, kinda. It is really hard to quantify.
For example, Dex on a CU is irrelevant, as they are all equal once trained at 125 dex. So HP would outweigh Dex alone, Int is not a factor. The only worthwhile comparison is STR to HP to Resists.

However, for a hiryu, max tamed dex is 135, meaning a few more hits per minute. In this example, skills come into play as well. A perfect hiryu with 100 wrestle (like wonder) will get owned by a mediocre hiryu with 120 wrestle. So we (the collecting tamer) would rate this by resists-skills-dex-hp-str. INT is not a factor.

A more extreme example is the rune beetle, with max dex of 170. How much difference in DPS is there between 125 dex and 170 dex? In this case, Dex would outweigh HP, as long as the HP was in an acceptable range (330-360). So we wind up comparing Dex to resists to skills to hp to other stats.

I agree with that assesment. Each pet is different. Rune beetles are probably the most complicated due to the number of variations you can have. Most pets have a max trained dex of 125. Other pets Str, Dex, and Int can go higher. For a spell casting pet, Int will be important.

Its very similar to the broad question of "which pet is best?" Well....there are certain pets that do better with certain monsters. When choosing your pets, it is wise to be aware of their limiations and their strong points and choose accordingly. Some pets will have more stats/skills that you will need to be aware of, other pets are simple in nature. Cu's you have to watch Hp's and Str, Rune beetles there is much more that you need to look for. Hiryu's its Hp's and Wrestle. Mares Hp's and Int. There are only a few pets that will actually break the GM barrier with skills.

Some people will always be more picky about their choices, the important thing to remember is pick a pet that YOU will feel comfortable with.
