| Need some dinner advice Ok, my mom can cook, but only very basically. Frankly if it can't be boiled or deep fried, she can't cook it... and even that is up for debate sometimes. So, we are having company this weekend and she requested I make dinner.
There will be five people coming. Out of the five of us, four of us are on a low carb diet. One is a picky eater. One is diabetic. One, thankfully, will try just about anything as long as he doesn't have to cook it. One will eat no meat except poultry. So I am trying to come up with a menu which will satisfy us all, without being boring and bland.
Let me know what you think.
For the main course I am making chicken breasts, with a layer of jalapenos (left off for the picky one) then a layer of swiss cheese, covered with turkey bacon.
My salad is going to be a tropical one. Starfruit, kiwi, bananas, and mangos with mango nectar and a vanilla yogurt for a dressing.
Veggies are going to be steamed asparagus. Also a califlower, steamed and mashed, mixed with cream cheese, parmesean cheese, and a dollop of heavy cream.
Appitizers/garnishes are going to be things like deviled eggs, radishes, tomato rosettes, and kim chi.
So, what do you think? Sound ok? We are all broken and wounded in this world. Some choose to grow strong at the broken places.
