how and what do most people train a cu sidhe on?

Hmm, you know, one of the ways I used to train my pets, at least, their melee skills and magery, was to dig up a shadow elemental, they don't take any damage from pets, so they last forever, heh
Obviously your pets take damage, but if you have gm peace, you can just keep peacing it.

You will achieve the best gains when training any pet by pitting it agains a monster with stats 10-20 points higher than the pet. This is the resource I use to find the right monster to fight. It works like a charm.
